Full-time Sous Chef-- P.M. Position overview: Manages the daily operations of the kitchen in absence of and in assistance with the Executive Chef.-- Oversees the preparation of food and inventory levels of the kitchen with a focus on consistent, high-quality food production while working to achieve budgeted numbers for food and labor costs. Essential Job Functions: Kitchen Operations Accountable that all food and products are consistently prepared and served according to the Pressroom Restaurant's standards.Utilize advanced understanding of food preparation techniques, garnishing, equipment operation and time management to meet service demands.Maintains kitchen inventory for all food and calculates correct pricing and quantity on a monthly basis.-- Work with purveyors on ordering and staff with checking-in deliveries.Understands and complies with all federal, state, county and municipal regulations that pertain to health, safety
