Qualifications DUTIES AND RESPONSIBILITIES:* The GM serves as a role model and sets a positive example for the entire team in all aspects of business and personnel management. The GM is of the highest ethical standards. * Manages a full P&L for the operations of the restaurant with an emphasis on controlling food, beverage and labor costs to corporate targets. * Develops a winning, professional and well trained staff that consistently exceeds guest expectations. Directs hiring, training, and scheduling of all personnel. * Oversees chefs to plan a differentiated and unique culinary strategy based on seasonal, local and fresh ingredients. Provides leadership and guidance to beverage and wine selections. * Works with chefs for efficient provisioning and purchasing of food, dry goods and restaurant supplies. Maximizes inventory levels and inventory turns. * Enforces all labor laws (federal, state and local).
