Summary:The Sushi Chef is responsible for development and presentation of sushi items, directing and supervisingmanagement associates in support of the General Manager, and performing all other responsibilities asdirected by the business or assigned Management of which associate is capable of performing. This isan exempt position and typically reports to the General Manager, depending on local requirements.Key functions:Develops sushi menu items and recipes; performs sushi presentation and other duties required ofproduction kitchenCoordinates with management on recruiting and training sushi staff and sushi prepPromotes safety and sanitation, inspects all food products handling, establishes and maintainssafe practices, and follows HACCP proceduresSupervises the day to day activities of associates, assigns responsibilities for specified work, andsets deadlines to ensure the timely completion of workMaintains effective cost control
