Specific projects involve: To study the effects of food toxins, such as reactive carbonyl species and advanced glycation end products on the development of chronic diseases using in-vitro ays and rodent models. To study the preventative effects of dietary polyphenols, such as flavonoids in general, gingerols, shogaols, stilbenes, and carnosic acid on the development of chronic diseases using in-vitro ays and rodent models. To understand the molecular mechanisms of food bioactives focusing on protein glycation pathways for carbonyl stress, and Nrf2 pathways for oxidative stress. To study dietary biomarkers using omic approaches.
